What Is Maceration?

Maceration is an extraction process in which fruits, herbs, spices, flowers, roots or other botanicals are steeped in a suitable liquid for a defined period of time. During this process, aromas, flavours, colours and other soluble compounds are extracted from the raw material.

In the production of No- and Low-Alcohol Beverages, maceration can be used as a stand-alone process or as a preparation for further processing steps such as filtration, blending or distillation.
