Hydrolates – often also referred to as plant waters, herbal waters or floral waters – are among the most fascinating natural ingredients in modern beverage development. They are produced as a by-product of the steam distillation of essential oils and contain the water-soluble aromatic compounds as well as minute amounts of essential oils from the respective plant.

Unlike pure essential oils, hydrolates have a much more delicate, harmonious and less dominant aromatic profile. It is precisely this characteristic that makes them a valuable ingredient for premium alcohol-free and reduced-alcohol beverages.

Production

Only fresh or gently dried plants are used to produce high-quality hydrolates.

During steam distillation, water vapour is passed through the plant material. The volatile aromatic compounds are carried along with the steam and subsequently condensed.

This process produces two natural products:

• Essential oil

• Hydrolate (aromatic plant water)

While the essential oil separates and collects on the surface, the water-soluble aromatic components remain in the hydrolate.

The result is a delicate and elegant plant water with an authentic botanical character.
