Distillation is a thermal separation process in which different substances are separated based on their different levels of volatility. It is one of the most important processes used in the production of spirits, distillates, essential oils and hydrolates.
The basic principle is simple: a liquid or plant material is heated. Volatile components are released into the vapour phase, then cooled and condensed back into liquid form.
The process can generally be divided into three steps:
Heating and Evaporation – Heat releases volatile components from the raw material.
Cooling and Condensation – The resulting vapours are passed through a condenser, where they are cooled and converted back into liquid.
Collection of the Distillate – The condensed liquid is collected as the distillate.
